A right royal taste

Selected Royal Oysters from France will be gracing the menu at Pullman Bangkok Hotel’s Scarlett Wine Bar & Restaurant from September 21 until the end of the October as part of the eatery’s annual Oyster Festival.

The Royal Oyster is a vintage, deep-cupped oyster harvested in a naturally iodised environment. This noble shellfish is a product of a rigorous selection and is traditionally matured in the Artouan marsh south of Marenes, on the Atlantic cost of France. Caressed by the ebb and flow of the tide, this oyster acquires pearly ornaments and develops a unique iodised taste all year long.
Thanks to natural selection and oyster expertise developed over five generations, the Royal Oyster has acquired its letters of nobility and were enjoyed by King Louis XIV of France. Year after year, Fabrice and Denis, grandsons of a family of oyster farmers continue to harvest the oysters by hand as their ancestors have done for 300 years ago.
The two will also be at Scarlett Bangkok from during September 21-23 to share their insights of oyster farming, accompanied by their gourmet specialist from Paris who will provide tasting notes and food pairing ideas.
There are many ways to eat Royal Oysters: try them raw with only whole pepper or steamed, as tartar, baked gratin style, fried, in soup, grilled, poached, in fritters or brochettes, or even in croquettes! You can also savour them as an accompaniment to fish, red meat and poultry or as a garnish.
The signature varieties include La Royal N2, La Royal N3, Wild oyster N3 and Fine Selection and prices start at Bt80. They are served individually or in sets of 3, 6 or a dozen.
