Scarlett Wine Bar & Restaurant celebrates autumn with French Royal Oysters all this month.

The Royal Oyster is a vintage, special deep-cupped oyster harvested in a naturally iodized environment. This noble shellfish is traditionally matured in the Artouan marsh south of Marenes, on the Atlantic coast of France and caressed by the ebb and flow of the tide.

This kind of oyster acquires pearly ornaments and develops a unique iodized taste all year long. The pleasures of these exquisite oysters were enjoyed by King Louis XIV of France. Year after year, Fabrice and Denis, grandsons of a family of oyster farmers continue to harvest the oysters by hand as their ancestors have done for 300 years ago.

There are several ways to eat Royal Oysters:  you can try them raw with only whole pepper or steamed, as tartar, baked gratin style, fried, in soup, grilled, poached, in fritters or brochettes, or even in croquettes. You can also savour them as an accompaniment to fish, red meat and poultry or as a garnish. The signature varieties include La Royal N2, La Royal N3, Wild oyster N3 and Fine Selection, with prices starting at Bt80 and served individually or in sets of three, six or a dozen.
