Three Michelin stars for Seoul restaurant

South Korean fine-dining restaurant La Yeon at the Shilla Seoul hotel in South Korea has been awarded three Michelin stars in the Michelin Guide Seoul 2018.

Since 2013, La Yeon has offered traditional Korean flavours and modern reinterpretations of time-honoured recipes. The award-winning restaurant distinguishes itself by using only authentic seasonal ingredients sourced from around Korea, as well as 100-per-cent Korean-made products. 
La Yeon has fine-tuned its techniques to honour long-held culinary customs. To ensure the authenticity and purity of the dishes, the restaurant’s culinary team continuously develops preserving and processing techniques. These innovations include maintaining a meat ageing facility, creating a special ageing storage facility exclusively for kimchi with optimal temperature and humidity settings, and designing separate storage units for sauces and pastes that are the foundation of Korean cuisine. Committed to culinary traditions, executive chef Kim Sung Il and his team regularly revive recipes from a 500-year-old cookbook, “Sooeunjapbang”, which dates back to ancient Korea, as well as traditional Korean cookbooks passed down through the generations.

La Yeon has also been included in the list of Asia’s 50 Best Restaurants for the last three consecutive years.
