Thai chef’s durian recipe is a souper seller

A Thai chef’s durian and chicken soup has become an instant hit among Chinese tourists visiting “Thailand’s King Fruit Paradise” fair in Chiang Mai.

The unique soup, being sold for Bt60 per cup, has sold in vast quantities, the equivalent of 10 kilograms per day, since being launched last week at the Commerce Ministry’s five-month fair.

The soup’s creator, chef Suriwipa Pimwichai, is a veteran of the Shanghai restaurant scene. She said she had put Mon Thong durian into the soup, made some adjustments to it and was confident her original recipe could be developed into a durian-flavoured Sukiyaki, since longan and tom yam Sukiyaki flavourings are already popular in China.

The event is being held at Chiang Mai’s Think Park mall until September 15. 
Organisers say durian fruit has also been in hot demand, with as much as 800 kilograms being sold per day.
One happy customer, 12-year-old Sue Zhing Zhui from Shanghai, said it was her first visit to Chiang Mai. 
She and her family had made a point of visiting the fair every day especially for the durian because it was so tasty. The durian soup had been just as good as the fresh fruit, she added.
