Have healthy ginger always at hand

Anyone wishing to ferment ginger easily need look no further than the “Abhaibhubejhr’s herbs” Facebook page hosted by Prachinburi’s Chaophraya Abhaibhubejhr Hospital.

Ginger, besides the amazing pungent taste it adds to dishes, is great for easing pain or nausea and works as an antibiotic, an antioxidant and a carminative (less flatulence, please).


The hospital herbalists say you’ll need one kilogram of ginger root, two tablespoons of salt, the juice of four limes and a cup and a half of sugar.


Peel and clean the ginger and cut into cross-sections, then pour the sugar, salt and lime juice over it.


Let it sit for one hour, until the ginger turns pink. 
Now it’s ready to eat, if you like, or if you want a longer-lasting preserve, boil the sugar, salt and lime juice first before adding the mix to the ginger.
