German Chef Stefan Heilemann from the two Michelin-starred restaurant Ecco in Zurich will be a guest chef at Banyan Tree Bangkok’s sky-high dining venue Vertigo TOO from July 29 to August 1.

The Stuttgart-born Heilemann trained for a decade at the renowned Traube Tonbach hotel in Germany’s Black Forest region, half of that time in the hotel’s legendary restaurant Schwarzwaldstube, Europe’s longest-standing three Michelin-starred eatery.

His cooking has been described as “brutally seductive” and “dishes of the gods” and diners can try his creations in four, five or seven course sets for Bt4,900, Bt5,500 and Bt6,500 respectively or paired with wine for Bt6,900, Bt7,700 and Bt9,000. Among his signature dishes are Blue Fin Tuna with Cucumber and Seaweed, Hand-dived Scallop with Fennel and Chorizo, Wild Salmon with Oyster and Prunier Cavair, Pork Belly with White Cabbage and Green Apple, and Bison Tenderloin with Onion and Bone Marrow.
