Treat your palate to an adventure all this month and next at Playground at the Pullman Bangkok Hotel G, where mixologist Albert Garcia Mozley has taken up temporary residence.
The self-trained British-Spanish drinks-specialist lives up to his dual heritage with conventional English sensibility mingled with Iberian spontaneity.
He’s been whipping up cocktails since he was 14, just under half his lifetime, and become one of the planet’s most savvy mixologists, keeping things fun as well as tasty for his patrons.
“A cocktail is all about having fun,” Mozley says. “And it’s even more fun when you play with it, when you don’t restrict yourself to what and what not to put in.”
Indeed, the sky’s the limit for Mozley. His menu ranges from traditional classics to innovative, molecular mixes and usually concoctions invented right on the spot.
For the Pullman, he’s in charge of the bar at Playground as well as its other food-and-beverage outlets while at the same time training the bar staff.
Invited to show off a bit, he splashes us up a Green Thai, heavy on the herb with sweet basil and rosemary and truly mild and refreshing. His classic mojito has ginger and cucumber, very subtle and interesting.
For sweeter teeth, his Cookie Martini is sinful, a creamy drink rich with chocolate and topped with thick cream. Make sure you stir well before sipping.
The “coup de glass” is the bizarre yet creative From the Sea. Mozley mashes up marinated smoked salmon with syrup and lemongrass-infused vodka and gives it a hard shake. The slightly thick nectar is even garnished with a chunk of salmon on a little toothpick. Cheers – and yum!
