Throughout this month, snow fish is the star at Le Grand Lanna restaurant that offers the fish prepared in three styles highlighting its tenderness and rich flavours while also showcasing traditional Thai ingredients. Dishes include steamed fillet of snow fish with ginger and spicy seafood sauce, deep-fried crispy snow fish fillet with tamarind sauce and tobi, or grilled fillet of snow fish served with a spicy Isaan-style mushroom salad. Prices start at Bt850-plus per dish.
Its Chinese restaurant Fujian, on the other hand, focuses on Iwate scallop dishes with a Chinese twist.  Cultivated in northern Japan’s Ryori Bay, Iwate scallops are known for their particular tenderness and lightly sweet flavour. Try the inventive combination of wok-baked whole scallops with creamy pumpkin sauce or savour the rare delicacy of braised superior scallops with Shogun shark fin soup. Prices start at Bt950-plus per dish.
With a more delicate flavour than green asparagus, prized white asparagus offers discerning palates a popular vegetable come springtime in Europe. To make the most of this season, Italian outlet Allegro is placing white asparagus front and centre as the star ingredient in many June dishes. From a light insalata of freshly picked seasonal greens topped with honey and citrus truffle-marinated white asparagus, to the robust braised Wagyu with black pepper sauce, truffle polenta and poached white asparagus. Prices start at Bt560-plus per dish.
