Blunos brings his hearty recipes to town

British chef and restaurateur Martin Blunos brings his two-Michelin-star cuisine to the Eastin Grand Sathorn Bangkok with the opening of Blunos poolside on the 14th floor of the hotel.

This is the first establishment Blunos has opened outside his native England. With his trademark walrus moustache and lilting West Country accent, Blunos’ amiable, friendly demeanour belies a skill that has led him to achieve two coveted Michelin stars each for his two restaurants and a host of TV appearances including his own show and appearances on “Iron Chef UK” and “MasterChef Australia”.
Forget fine dining and avant-garde adventures, Blunos is all about value for money hearty fare and classic comfort food devoid of any pretentiousness, yet made with the desirable of ingredients prepared with Blunos’ careful selection.
“My Michelin stars were a great personal achievement but in the end it’s not the accolades you hang on your wall which count, it’s the empty plates and satisfied smiles which truly mean the most. At Blunos I’ll be making real food for real people,” he says.
Blunos’s menu certainly lives up to this promise with a selection of satisfying dishes at prices that are as enticing as the food, including his range of signature specialities such as a quarter shoulder of lamb cooked long and slow with lots of garlic and lemon and rosemary on crushed potatoes, “The Fisherman” - oak-smoked salmon & salmon mousse, rollmop herring, poached whitefish, prawns and mussels served chilled with lemon, Marie Rose & garlic herb dips and Melba toast, smoked salmon mousse with toasted croutes, crab cakes with wasabi mayo and hand-cut beef chilli with Thai jasmine rice, sour cream, crispy tortilla and coriander sprigs plus a dreamy range of fantastically familiar desserts.
The atmosphere at Blunos fully complements the menu with an appealing ambience that encourages diners to linger awhile over a languid and laid-back meal simply enjoying the moment, while the new poolside “hang-out” bar with nightly resident DJ provides the perfect spot to relive the very best of times in the very best of company.
