
Chef Matteo Verini is preparing traditional favourites with the pork and other typical ingredients from Tuscany, served at dinnertime only.
Salsiccia e Fagioli al Uccelletto is pork sausage with white beans stewed in tomato sauce. Pappardelle al Ragu is “Grandma’s handmade pasta” with pork ragout. Stracotto al Chianti is Tuscanystyle braised pork shoulder in wine with potatoes. And Braciola Ripena is a pork chop stuffed with porcini mushrooms and black winter truffle.
That’s not all. The chef has also created three vegetarian dishes matching the fabulous flavours.
Tortelli al Cavolo Nero e Pecorino is homemade ravioli filled with black kale and served with Tuscan Pecorino cheese cream. Risotto Asparagi e Zafferano is Vialonbe nano rice, saffron, green asparagus tips and aged Parmesan cheese. And Zuppa di Farro is fantastic barley soup presented with rustic Tuscan bread and extra virgin olive oil.
“Tuscany has so many culinary delights to offer, many of which are little known outside Italy,” says Verini. “By sharing the wonderful Cinta Senese pork with our guests, we hope to bring them a rare, authentic Italian dining experience – and a delicious one at that.”
