Hokkaido delight
Utage, Japanese restauarant at Plaza Athenee Bangkok, a Royal Meridien Hotel, introduces new menu featuring fish and seafood from Hokkaido.
From now till 30 September, classically trained Head Chef Samart Suphan and devoted team at Utage Japanese Restaurant, Level 3, Plaza Athenee Bangkok, A Royal Meridien Hotel, present a long list of new menus featuring the choicest fish and seafood sourced from Hokkaido.
Seven aquatic stars of the menu are Kinmedai, Hirame, Enkawa, Hotate, Akagai, Mirugai, and Madai. Kinmedia, literally ‘golden-eye’ tai, sometimes called Splendid Alfonsino, is a white fleshed fish rich in protein, vitamins and minerals.
Special menu items include sushi, sashimi, aburi sushi, aburi saikyu and kabutoni.
Ocean Hirame is a large-tooth flounder, highly prized as the Japanese flatfish halibut
Menu items include sushi, uzukuri, aburi and sashimi.
Enkawa is a delicious, chewy flatfish, sometimes called fluke fin, here presented in all its natural glory.
Ocean Hotate scallops are among the most treasured sushi delicacies. The large bivalves impart a rich, sweet taste and soft consistency. Menu items include sushi, sashimi, aburi sushi, aburi saikyo, and Ocean hotate butter.
Akagai, meaning arc shell, is translated as "red clam" because of its red flesh indicative of its high haemoglobin content. Preparation is meticulous but its deep flavour, strong aroma and soft chewiness are a real treat. Menu items include straight akagai and sushi.
Mirugai is a species of large, edible, saltwater clam. It’s rarity and deliciousness make it highly prized. Menu items include sashimi and sushi.
Ocean Madai, or red sea bream, is prized both for its flavour and its reputed auspiciousness. Menu items include: sashimi, sushi, aburi sushi, aburi sai kyo and kabutoni.
All this plus all seven together in the ultimate in-season Aburi Mori Sushi.
