Meals just like mum used to make

A new cosy bistro offers a small but satisfactory selection of main dishes and desserts

After eight years of working in the kitchens of such five star hotels as the Banyan Tree, Erawan and Dusit Thani, Metha Janprasong has finally realised his dream, pouring his life savings into opening his very own bistro at Thanya Shopping Park in Bangkok’s eastern suburbs.

Called Maman, French for mother, the 10-seat bistro offers a selection of western-style main dishes and desserts based on traditional recipes. Metha opened in November and he’s kept his modest eatery simple, with clean concrete walls, wooden tables and chairs and yellow barstools providing a welcome splash of colour.
Metha himself prepares the dishes in a small pantry space. Pasta, sauces and dressings are all home-made, while the desserts are baked fresh at Metha’s home. He recommends tuna lettuce salad with red wine dressing, country fries mixed with paprika, pasta Bolognese and his version of pasta carbonara, which is made with eggs blended with butter and cheese rather than cream.
“All my dishes have a traditional flavour and are based on the original recipes. I focus on a simple presentation and make my own jams and sauces,” says Metha. “My dishes are light but wholesome and ideal for enjoying with a cold beer.”
For lunch, I try a spinach gratin for Bt75 and another gratin – this one with smoked chicken and eggs mixed with butter and cheese. I follow up with a scone stuffed with raisins that’s topped with both home-made raspberry and strawberry jam for Bt45. Metha also offers a hot chocolate fondant made from dark chocolate, as well as soft mamon cake, topped with cheddar cheese.
Maman also serves a selection of aromatic coffees as well as imported beers.
