As a follow-up to the letter in which I referred to carbohydrates, there is an extremely important point I wish to make. There is a tremendous difference between simple carbs – such as those found in sugars and white bread – which are not good for you, and complex carbs that are in fruits, grains and vegetables, which are essential for good health.
But because of the demented Atkins diet craze, often no distinction is made between good carbs and bad ones and thus the public thinks all carbs are unhealthy. Such a misunderstanding has had devastating effects on human health and I honestly believe the Atkins diet has killed more people than any war in history.
