Dangerous misinformation from a dietician

Re: “No food or drink will turn you not a calorie burning machine”, Opinion, June 4.

The author, a registered dietician, fumbles and stumbles in trying to make sense of the outdated and erroneous “calories make you fat” theory. She fails to give a clear answer, quite simply because there isn’t one. Leaving aside the calories baloney, there are a couple of points where she gives advice that is potentially harmful to health.
Dieticians advise us to eat five or six servings of grain per day, to make up to 15 per cent of our daily intake. Yet, it’s more like 11 times daily when you factor in their advice to eat foods high in starches – including bread, pasta and cereal on top of potatoes, rice and corn. The only thing not in the grain category there is potato.
All grains are high in lectin plant phenols, chemicals that desensitise cell membranes to insulin, causing insulin overproduction. Grains are also high in leptin plant hormones that interrupt signalling between the liver and pancreas, causing insulin disruptions. These two pathways cause obesity and diabetes 2.  Wheat and most other grains raise blood sugar. A slice of organic wholewheat bread raises blood sugar more than a candy bar. Grains raise artery-calcifying triglycerides. Grains are high in phytates that block calcium and iron absorption. (White flour has residual chlorine from bleaching that depletes immune-boosting body-stores of  selenium). I soak my unpolished brown and black rice overnight to start germination which neutralises most of grain’s negatives.
Green tea is highly recommended as it somehow boosts metabolic rate. However, green and black teas contain highest amount of naturally occurring fluoride of anything we consume. Fluoride attracts radioactive particles into the spleen, from there available to start and fuel all malignancies (Clark, HR, PhD ND 1995). Fluoride creates bone damage from fluorosis, leading to pain and brittle bones. Teeth also get mottled and easily chip. (Children have died of fluoride poisoning after dentists applied fluoride to their teeth and gums, in the hope of preventing cavities). These teas are high in oxalate plant chemicals that inflame the kidneys, and can lead to total kidney failure (New England Journal of Medicine, 2015). Oxalates form painful kidney stones, which can get stuck in the urinary tract to the bladder, needing surgical removal!
How is it then that in Japan, where green tea is drunk daily by the litre, the population enjoys a longer-than-normal lifespan? Dig a little deeper and we find that in Japan they have near epidemic incidence of stroke, cancers, dementia, diabetes, arthritis, high blood pressure, osteoporosis and, in heavier-boned people, even obesity. The magic of green tea is just Big Food marketing.
Why do dieticians ignore the science and keep repeating out of date and harmful dogma? The American Dietetic Association, which the world followed, was exposed as a totally corrupt, self-appointed organisation, fully funded by food growers, manufacturers of beverages, processed foods and confectionary, fast food companies, a biotech giant and, indirectly, by big pharma. After being exposed, they quickly changed their name to the important-sounding Academy of Nutrition and Dietetics.
