If you feel the need for a sugar lift during the day, stop off at Masatomi Patisserie and sink your teeth into one of the scrumptious cakes created by Tommy Rungnoppakunsi in the best Japanese and French traditions.
Tommy, 49, has long had a passion for Japanese-style soft cakes. Two years ago he enrolled himself in a patisserie course at Le Cordon Bleu Dusit Culinary School and focused all his energies on making delicious desserts. He then took early retirement from his marketing job and set about making his career dreams come true.
Two weeks ago, he teamed up with a pal and opened a patisserie in The Portico community mall on Soi Langsuan, where smooth sweet potato Mont Blanc cakes sit on the shelf alongside popular French macaroons. Hungry fans can enjoy a dozen delectable fillings including lavender, Ispahan, orange blossom, earl grey butter cream, raspberry curd, citrus cream cheese, caramel butter cream and sesame honey. The macaroons range in price from Bt35 and Bt45.
"I want to offer a variety of desserts. The lavender macaroons are made from real lavender flowers mixed with cream and white chocolate. The green Samui macaroon is made with pandanus leaf and coconut milk while the Ispahan macaron is infused with pink rose and lychee," says Tommy. "You can find cakes made from seasonal fruits and flowers like peach and sakura too."
Although based on Japanese recipes, most of the desserts are made with local ingredients. Among the must-tries are sweet potato Mont Blanc cake for Bt90, green tea white chocolate cake and mochi cakes stuffed with strawberry shortcake (Bt125), mango mousse and green tea-red bean.
His European range features Alhambra chocolate cake topped with strawberry and raspberry jam, yummy lychee charlotte and the French classic fraisier cake (Bt90). If you want something lighter, nibble on such delicious tarts as maple chocolate, maple pecan, traditional French bourdaloue and apple. Also on offer are fruit and nut bars, brownies and castellas, The bakery also accepts custom orders.
