Every bite is lucky at Yuan

A Hong Kong chef seasons his Chinese New Year menu with good fortune

Greeting the Year of the Snake while sitting next to the undulating Chao Phraya River seems appropriate, and Yuan, the waterside restaurant at the Millennium Hilton, is pulling out the stops for Chinese New Year. From February 9 to 14, new executive chef Cheung Chin Choi will have an elaborate Cantonese a la carte menu on which every dish is symbolic.

Cheung boasts more than three decades’ experience in Hong Kong, Shanghai, Bali, Perth in Australia and the United Arab Emirates. Everywhere is goes, though, he works Cantonese magic, presenting traditional cuisine with a contemporary twist.
“Cantonese food comes from the south of China,” he says. “We focus on seafood and fresh ingredients, but the secret in the cooking is heat and speed to keep the ingredients fresh and delicious. And, since more people are concerned about their health these days, I use less oil.”
The chef’s lunar menu includes 10 dishes designed to bring diners and families success and wealth this year. Cheung says the mushrooms, fish and dried oysters and scallops he uses are all considered auspicious.
The must-try dishes include a scrumptious Bt888 plate of braised winter melon rings filled with dried scallops and golden garlic. It signifies joy and money. For guaranteed happiness you should order the aromatic braised, dried scallops with sesame moss and dried oysters, priced at Bt1,888.
Delectable sauteed sea scallops with elm-ear mushrooms for Bt1,633 will ensure the year runs smoothly – and boost your chances of having a male baby! If it’s a financial windfall – as in gold in the pocket – that you really need, get the yummy poached Star Red-banded grouper “in superior stock” for Bt2,988. And the braised pork leg and tongue with green vegetables will keep your business stable.
Chef Chueng will be finishing off the meals to perfection with bite-sized sesame-seed dumplings (Bt118), Chinese New Year cake (Bt128) or glutinous rice balls in coconut milk (Bt138).
Besides the a la carte menu, there are set meals for groups of 10 ranging in price from Bt15,000 to Bt55,000.
