A LONG-TIME favourite of Thais and local expats, the Spice Market at the Four Seasons Hotel offers some of the most authentic regional dishes in town. Based on original recipes and exquisitely presented, a meal at the Spice Market is akin to taking the taste buds on a tour of Thailand.
The decor is charming too, with shelves lined with spices and herbs and ledges bearing large gunnysacks of rice and salt giving off the charm of a traditional spice shop. With space for 72 diners, the atmosphere is deliciously relaxing and diners can happily sink into the comfortable chairs and banquettes over a quiet meal.
The kitchen is under the supervision of skilled chef Supanut Khanarak who is responsible for designing a range of dishes that will appeal to every taste.
“I’ve worked here for six years now and I place emphasis on mixing and matching the ingredients to showcase the creativity of Thai cuisine. While we serve dishes typical of all four regions, the focus in mainly on the Central region,” she says.
We start our meal with a selection of Thai snacks (Bt390), which include kratong thong topped with scallop, chicken, crab meat and mango, kaow tang na tang (rice crackers with minced pork, shrimp and tuna dip), assorted grilled chicken, beef, pork and shrimp satay with peanut sauce and chaw muang (a sweet cake filled with pork, sugar and coconut milk.
Next up is spicy crab meat salad with grilled river prawns (Bt430) and aromatic stir-fried shrimp balls mixed with scallops, mushroom, chilli and basil leaves (Bt480). We also sample a rich red curry made with crab meat, coconut milk and crispy soft shell crab (Bt480).
For dessert, Supanut recommends the small tiffin carrier that has its layers filled with warm tapioca with gingko and coconut milk and a delectable steamed banana cake mixed with coconut meat.
