Sylvain Sendra of the Paris Restaurant Itineraires arrives with shellfish surprises

ylvain Sendra, whose Paris restaurant earlier this year became earned the first Michelin star awarded in 2013, is set to wow Thai foodies tomorrow with a sumptuous six-course dinner at the V Villas Hua Hin.
The Frenchman came out of the Vatel Institute Culinary School to land a job at the celebrated Hotel Byblos Saint-Tropez on the Riviera, and subsequently worked with Michelin two-star chef Jean Marc Delacourt, holder of the Meilleur Ouvrier de France.
Sendra launched a sensational Parisian tapas trend, rewarding his financial backer with mammoth success. Still just 24, he opened Le Temps au Temps with his wife Sarah to critical acclaim, and then in 2008 Restaurant Itineraires, also in Paris, with a menu inspired by visits to Japan and Peru. Itineraires was awarded a Michelin star this year.
Tomorrow’s banquet includes Arctic king crab and avocado in vegetable ravioli, garden potato soup with smoked-milk foam, grilled line-caught French John Dory and green mango, Boston lobster and citrus confit and vanilla cassata.
The coveted Michelin stars are awarded by the publisher of guidebooks covering more than a dozen countries. The Michelin Red Guide is the oldest and best-known reference to European hotels and restaurants. Michelin “inspectors” maintain absolute anonymity while visiting restaurants under consideration and the firm covers all costs to guard against suspicions of bribery.
