Up & Above goes fishing for lobster

The restaurant Up & Above on the 24th floor of the Okura Prestige Bangkok, will be cooking Phuket and rock lobsters to match every local and international palate all next month.

Rock and Phuket lobsters are renowned for the firm, sweet meat, enjoyed poached, grilled, fried or steamed, on its own with melted butter or as the central ingredient of a more complex dish.

On the menu at Up & Above will be appetisers such as Poached Phuket Lobster Salad with green mango and Thai herbs, and Marinated Rock Lobster and Avocado Salad with mozzarella, rocket and citrus dressing.

Both of these dishes are full of zesty flavour and make great preludes to the main course. Those offerings will include the Mediterranean-inspired Rock Lobster Poached in Butter with Parmesan risotto, basil and fresh asparagus, and a hearty half or whole Grilled Phuket Lobster with spicy Thai dipping sauce and yam som-o.

Of course, classic Lobster Thermidor will be available, a Phuket lobster in homemade fettuccini with herbs.
