This giant of crustaceans can be enjoyed throughout June at The Okura Prestige Bangkok Hotel’s Up & Above restaurant.
Prized for their succulent flesh and delicious whether grilled, barbecued, fried or steamed, giant tiger prawns take centre stage in such a la carte appetisers as salad with fennel, tomato, wasabi rocket and mango salsa, and with green mango som tam and spicy aromatic dressing. Main course offerings include grilled marinated tiger prawns with cous cous, a spicy harissa chilli paste, and a fresh cooling side salad. Equally full of flavour is a green curry with tiger prawns, eggplant, pineapple and coconut. In a culinary nod to Mediterranean seafood traditions is tiger prawn saltimbocca, a wonderful dish of tiger prawns seasoned with sage, wrapped in prosciutto and served with creamy polenta, crunchy endive and a piquant orange butter sauce.
Any which way they come, jumbo tiger prawns are a popular Asian summer delicacy best enjoyed with a glass or two of crisp chilled white wine.
