Three minds, six hands, one kitchen

X2 Chiang Mai Riverside Resort celebrates its opening with an exclusive dinner this Saturday (November 25) in the stylish Oxygen Dining Room.

The stunning contemporary waterfront resort brings together three acclaimed French chefs to create a locally sourced feast on the banks of the Ping River.  Consulting chef Nicolas Isnard and executive chef Alexandre Demard will join with guest chef Herve Frerard in creating a unique nine-course menu of exquisite Thai-inspired dishes.

Isnard, an internationally acclaimed chef whose restaurant L’Auberge de la Charme in Dijon, France, was awarded a coveted Michelin star in 2009, will play the leading role in the kitchen. 

Making two creative hands become four is Demard, who discovered a passion for cooking at the age of 14 and later opened his own restaurant Le Manoir in Cannes.

A protégé of Isnard, Demard learned about the intricate fresh flavours of Thai cuisine, which prompted him to sell his restaurant in France and join X2 Chiang Mai Riverside Resort.

Completing the culinary tricouleur is special guest chef, Frerard, a graduate of the famous Ferrandi, Le Grand Cours de Cuisine, in Paris who has been delighting diners in Bangkok as chef and partner at Aldo’s Bistro and Bar in Bangkok since the beginning of this year.

The three culinary minds and six skilled hands will prepare an array of exquisite dishes including kao soi gai (the famous Chiang Mai chicken noodle curry),  larb tord 2.0 featuring marinated pork croquette with Thai essences and roasted pineapple with Doi Saket vanilla piña colada ice-cream and lemon crumble.

The six-hand Chef Exclusive Dinner is priced at Bt2,900-plus per person. The restaurant also serves a special set lunch by Isnard and Demard from Tuesday to Thursday (November 21 to 23) at Bt900-plus.
